Ninety seconds in the coal oven
Il Fuoco
Coal, never gas.
The oven crossed from Naples in a shipping crate in 1987 and has burned coal ever since. Marco feeds it each morning the way his grandfather did. Ninety seconds a pizza: blistered, leopard-spotted, a crust you can hear.

La Farina
Rolled before sunrise.
At half past six the board is floured and Nonna Lucia’s recipes come out: 00 flour, eggs, nothing else. Eight shapes, rolled and cut by hand. What isn’t eaten tonight is gone; pasta here is never dried, never kept.
